White Coffee (Ahweh Bayda)

When we would have people over or if we were at somebody’s house, inevitably the question would pop up “anybody care for white coffee?” White coffee is simply a beverage that is usually offered after a meal in lieu of regular coffee, for those people who do not care for the caffeine-laden Turkish coffee. It is made up of water and a bit of orange blossom water, with or without sweetener. My grandmother would always offer me some when I was young and complaining of a tummy ache, because it is supposed to facilitate digestion and soothe the nerves. It is poured in a demitasse cup, about one teaspoon per cup.
INGREDIENTS: Per one serving
water, about 2 ounces
orange blossom water, about 1 teaspoon (or less, to taste!)
sugar (optional), to taste
METHOD:
  1. Pour one teaspoon of orange blossom water per demitasse cup.
  2. Bring water to the boiling point. Add the sugar and stir to dissolve.
  3. Pour the water on the demitasse cup and serve.
